March – Scots-Irish Culinary Tour

As a person of Scottish and Irish descent, I have become more and more fascinated with the history and culinary traditions of these Celtic lands.  While visiting a while back, I was taken with just how wonderful the food really is!  So much more than the stereotypical potato, lamb and porridge dishes, the food culture has become vibrant with upscale takes on traditional dishes, and clever borrowing of flavours from surrounding cultures. I can’t wait to present some of my very favourites in this cooking class!

We will start with traditional Scottish haggis, simplified with local ground lamb, sourced from our own Reidridge Farm in Oliver, served with winter storage winners like potatoes and rutabaga and elevated as a beautiful appetizer with whiskey cream sauce. Then we’ll head to Ireland for a taste of fennel bisque with local Eat the Fish smoked trout. Our main is a hearty Guinness stew with the traditional Irish soda bread, made with Brule Creek flour.  Finally we will head back to the highlands to enjoy cranachan, a rich and creamy dessert folded with raspberries and crunchy baked oats and a drizzle of honey.

Oh and as a bonus… what an excellent time to celebrate the gastronomy of this area of the world, as this class falls in between the Scottish Robbie Burns day and the Irish St. Patrick’s Day.  Further, this time of year in Ireland and Scotland is affectionately known as “still winter” something that we as Canadians can certainly relate to! 😉

    • Scottish Haggis bites with neeps, tatties and whiskey sauce
    • Creamy fennel and smoked trout bisque
    • Irish beef stew with Guinness, wheaten bread (Irish soda bread)
    • Cranachan with raspberries and honey

Class is 3.5 hrs in length and includes full recipes so that you can recreate this at home.  So grab a friend, maybe some Guinness or Scottish ale, and your appetite for this culinary tour of some of my favourite Celtic recipes.

 

Registration

Cost is  $92.00.  Register by e-transfering payment to info@afinefitcatering.ca and be sure to make a note of the particular class this is for in the memo!

Refund Policy

Your seat is confirmed once payment has been received. If you are unable to attend the class, please let me know at least one week in advance. A refund of 100% will be provided if notice is given at least one week in advance or if you are able to find someone else to take your spot. Less than 1 week notice will result in a 50% refund. Please contact me with extenuating circumstances.

 

Alcohol

While wine is not served or provided by A Fine Fit Catering, guests are welcome to bring their own. A safe ride home plan needs to be in place before any more than one alcoholic drink can be consumed. Please inform me of the plan for ensuring safe transportation following the class. If a designated driver is required, we can arrange for Granite Town Cars or other transportation to ensure safety. An additional charge would incur for this service.
