This year I am bringing you a completely new cooking class with an Irish theme! As part of my own heritage, I have always been fascinated with everything Irish, from the music to the drinks, but I am especially interested in the food. Celebrate St. Patrick’s Day this year by joining me on a tour of some of my favourite culinary treasures Ireland has to offer.
We will begin with a classic appetizer of “rarebit,” borrowed from the Welsh, but with an Irish twist of their dark ale ;). This course will also feature some bright microgreens from Veg-e-tate Market Garden, The Sapling rye bread and Superior Seasons winter storage onions. For our soup course, I will introduce a comforting and creamy fennel and smoked trout bisque with the help of our friends from Eat the Fish. Then we will dig into a main course of good slow braised lamb with the classic Irish soda bread, also called wheaten bread, made with Brule Creek sifted flour. And for dessert, to once again celebrate the Irish stout, we’ll prepare a delicious bundt cake with Crème Anglaise.
- Rarebit, with microgreens and pickled onion
- Creamy fennel and smoked trout bisque
- Pistachio sorbet – Prime Gelato
- Irish lamb stew with Guinness, wheaten bread (Irish soda bread)
- Chocolate stout cake with Crème Anglaise
