After a full holiday season, let’s start the New Year with my exciting Eat Clean menu that borrows flavours from around the world!  When you hear the term “Eat Clean” you may think of the Mediterranean diet, or the Paleo or Vegan diet.  While I won’t be focusing on any particular dietary “trend,” what I do want to stress in the courses we share is the use of whole ingredients that avoid highly processed foods, utilizing superfoods with high nutrient content, and breaking out of our comfort zones in using new vegetables and grains.

To celebrate the diverse flavours of the world, we will start in the Middle East with my favourite – tabouli salad made with quinoa, a supergrain that packs a protein and nutrient punch right out of the gate.  Then we’ll head to the deep South for a Texas and Mexican-inspired chowder, replacing heavy cream with coconut cream to lighten up and add interest.  Off to the Mediterranean we will go for a delicious Northwestern Ontario caught pickerel dinner with French-influenced ratatouille.  Finally, we’ll end up in France to eat soufflé with a hit of wild blueberry compote.

As we do in every class, local producers will be highlighted in each course, including walleye from Eat the Fish, Veg-e-tate microgreens and shoots, Prime Gelato, Bears, Beas and Honey, and producers from Superior Seasons Food Market.

  • Limone sorbetto – by Prime Gelato
  • Mediterranean walleye “en papilotte”, winter squash ratatouille
  • Lemon souffle with wild blueberry compote

 

Bring your partner or a friend and your appetites for this delicious world tour of courses made with whole foods to nourish our bodies and souls.  Class is 3.5 hrs in length and includes full recipes so that you can recreate this at home.  Space is limited so sign up soon!

 

Registration

Cost is $80 per guest (including HST but not including gratuity). Register through the Paypal link below or e-transfer to info@afinefitcatering.ca and be sure to make a note of the particular class this is for in the memo!

 

Refund Policy

Your seat is confirmed once payment has been received. If you are unable to attend the class, please let me know at least one week in advance. A refund of 100% will be provided if notice is given at least one week in advance or if you are able to find someone else to take your spot. Less than 1 week notice will result in a 50% refund. Please contact me with extenuating circumstances.
