January – Eat Clean Around The World – 1st serving

Happy New Year everyone!  As is customary in this month, we often spend time re-thinking our defaults and challenging ourselves to make positive change.  And what better way to do this than with my exciting Eat Clean menu that borrows flavours from around the world!  When you hear the term “Eat Clean” you may think of the Mediterranean diet, or the Paleo or Vegan diet.  While I won’t be focusing on any particular dietary “trend,” what I do want to stress in the courses we share is the use of whole ingredients that avoid highly processed foods, utilizing superfoods with high nutrient content, and breaking out of our comfort zones in using new vegetables and grains.

To celebrate the diverse flavours of the world, we will start in China with my favourite – rice wraps with dipping sauces. Then we’ll pop over to Thailand for a delicious coconut broth seasoned with lemongrass and galangal (pictured) served in beautiful pottery.  Off to France we will go for a delicious Northwestern Ontario caught trout (Eat the Fish) in a fresh lemon and garlic rub, served with the class ratattoille. While we’re there we will make a lovely lemon souffle (delicieux!) and come back home for some wild blueberry compote to garnish. This menu is free of pre-packaged and processed food and happens to be both gluten and dairy free!  However, please do make mention of any dietary need you may have.

As we do in every class, local producers will be highlighted in each course, including trout from Eat the Fish, Tarrymore Farms, Prime Gelato, Lacroix Aquaponics and producers from Superior Seasons Food Market.

Menu:

  • Chinese rice wraps with dipping sauces
  • Coconut broth with edamame and soba noodles
  • Sorbetto
  • Seared lake trout gremolata, ratattoille
  • Lemon souffle with wild blueberry compote

Bring your partner or a friend and your appetites for this delicious world tour of courses made with whole foods to nourish our bodies and souls.  The class is 3.5 hrs in length and includes full recipes so that you can recreate this at home.  Space is limited so sign up soon!
