January – Eat Clean – 1st serving (SOLD OUT)

Happy New Year everyone!  As is customary in this month, we often spend time re-thinking our defaults and challenging ourselves to make positive change.  And what better way to do this than with my exciting Eat Clean menu! When you hear the term “Eat Clean” you may think of the Mediterranean diet, or the Paleo or Vegan diet.  While I won’t be focusing on any particular dietary “trend,” what I do want to stress in the courses we share is the use of whole ingredients that avoid highly processed foods, utilizing superfoods with high nutrient content, and breaking out of our comfort zones in using new vegetables and grains.

To start, we will celebrate the beautiful, rich avocado in my take on “avocado toast” with the whimsical addition of marinated beets and pea shoots.  Then we’ll enjoy the umami flavours of mushrooms and miso in the soup course, replacing the usual heavy cream with coconut cream to lighten it up and add interest.  Our main course will be seared lake trout with a lovely medley of roasted broccoli, kale and cauliflower with a lemon and tahini drizzle.  Finally, we’ll enjoy a light and lemony souffle with haskap berries, one of my favourite new additions to the menu since discovering this Northern Ontario superfood. The menu is free of pre-packaged and processed food and happens to be both gluten and dairy free!

  • Avocado tartare on toast with slivered marinated beets and pea shoots
  • Seared lake trout gremolata, roasted brassica medley, red rice pilaf
  • Mushroom and roasted garlic miso soup with coconut cream 
  • Lemon souffle with haskap berry compote

Registration

Cost is $96 per guest (including HST but not including gratuity). Register through e-transfer to info@afinefitcatering.ca and be sure to make a note of the particular class this is for in the memo! 

Refund Policy

Your seat is confirmed once payment has been received. If you are unable to attend the class, please let me know at least one week in advance. A refund of 100% will be provided if notice is given at least one week in advance or if you are able to find someone else to take your spot. Less than 1 week notice will result in a 50% refund. Please contact me with extenuating circumstances.

Alcohol

While wine is not served or provided by A Fine Fit Catering, guests are welcome to bring their own. A safe ride home plan needs to be in place before any alcohol can be consumed. Please inform me of the plan for ensuring safe transportation following the class. If a designated driver is required, please arrange for transportation to ensure safety.

***PLEASE NOTE: Due to insurance requirements, as of November 2023, a signed waiver is required for all guests. Physical copies of this waiver will be made available at the outset of the class as well.***
