April’s cooking class – Caribbean Flavours #2 – SOLD OUT

By April, we often find ourselves pining for Spring to arrive, and wishing we were perhaps in the Caribbean somewhere. Well friends, I’ve created this month’s class with this in mind! Having spent a number of years (before kids) in the Bahamas as a school teacher and now heading back to the islands (with kids!) every few years to say hello to old friends and enjoy the warm weather, the islands have developed a special place in my heart! Accordingly, these recipes are closely linked with the Bahamian style and flavour palette, with a few shout-outs to Jamaica and Mexico!

We will begin by indulging in rich Gouda macaroni bites with a bit of kick and make walleye fish cakes Caribbean-style with tangy crema and fresh pineapple salsa. The main course will feature fresh jerk marinated pork tenderloin with exotic mango and jicama slaw and classic Bahamian peas’n’rice, perhaps the most popular side dish on the islands. Finally, we’ll end our evening in the tropics with classic rum cakes with coconut cream!

Local producers featured this month are: Thunder Oaks Cheese Farm, Eat the Fish, Veg-e-tate Market Garden, Heartbeat hot sauce

Menu:

  • Spicy Bahamian macaroni bites with Thunder Oaks Gouda 
  • Caribbean fish cakes with walleye, pineapple salsa fresca 
  • Jerk pork tenderloin with peas’n’rice and jicama slaw 
  • Coconut rum cakes

 

Registration

Cost is $96 per guest (including HST but not including gratuity). Register through e-transfer to info@afinefitcatering.ca and be sure to make a note of the particular class this is for in the memo! 

Refund Policy

Once payment has been received and you will receive an initial email to confirm your seat.  If you are unable to attend the class, please let me know at least one week in advance. A refund of 100% will be provided if notice is given at least one week in advance or if you are able to find someone else to take your spot. Less than 1 week’s notice will result in a 50% refund. Please contact me with extenuating circumstances.

Alcohol

While wine is not served or provided by A Fine Fit Catering, guests are welcome to bring their own. A safe ride home plan needs to be in place before any alcohol can be consumed.  If a designated driver is required, please arrange for transportation to ensure safety.

***PLEASE NOTE: Due to insurance requirements, a signed waiver is required for guests. Physical copies of this waiver will be made available at the outset of the class as well.***
