Back by popular demand, this month will feature French Cuisine! As the foundation of so much of today’s cuisine, and part of my heritage, I am so excited to bring you some of my favourite flavours from France. We will learn about composed salads with the Niçoise, enjoy the classic bourguignon with a northern flair with the addition of elk, and end the evening learning some French choux pastry technique. Along with the cooking styles and flavours of France, I couldn’t help throwing in my favourite French Canadian classic – pea soup!
Local producers celebrated this month are: Rainy River Elk Company, Tarrymore Farms, Veg-e-tate Market Garden, DeBruins, Prime Gelato. 4-hour class includes a recipe booklet with tips and tricks from the Chef!
- Pea soup with garlic baguette crouton
- Niçoise salad jardiniere
- Beef and Elk bourguignon, thyme infused rutabaga
